A very interesting article about the horse meat industry. Listing statistics, countries that eat horse meat etc I could not understand why slaughter houses buy old horses, thinking the meat would be so tough. This article explains it. - "Horse meat is usually very lean and tender. Jurisdictions which allow for the slaughter of horses for food rarely have age restrictions, so many are quite old. However, unlike many other types of meat, horse meat becomes more tender as the animal advances in age." And Check your Salami - traditional recipes use horse meat. en.wikipedia.org/wiki/Horse_meat

I was trying to understand how a country can justify eating horses. But if you read the articles below, it is easy to understand the mentality of a lot of these countries, some of their people eat their pet dogs and cats!! And not just in China. See the links provided below for lots more info. I was shocked to read that dog and cat meat is still being eaten in parts of Switzerland and it is legal!! Quote -"In Europe, cats are eaten in some rural parts of Switzerland;[10] the traditional recipe on farms in some regions involved cooking the cat with sprigs of thyme.[11] In January 2004, Reuters reported that, "Swiss culinary traditions include puppies and kittens. Private consumption of cat and dog is permissible. Swiss animal welfare groups say it is hard to estimate how many pets end up salted and smoked or in a Swiss frying pan each year." "Dog sausage and smoked dog jerky remains a staple in the Swiss cantons of St. Gallen and Appenzell" "Popular Swiss recipes for dog meat include geforrtes hundefleisch served as paper-thin slices as well as smoked dog ham, and hundeschinken also called viande de Grisson which is prepared by salting and drying raw dog meat.[7]" In Poland "While the meat is not eaten, in some rural areas of Poland dog fat is can be made into lard which by tradition is believed to have medicinal properties - being good for the lungs, for instance. In 2009 a scandal erupted when a farm near Czêstochowa was discovered rearing dogs to be rendered down into lard.[72]" It is legal to sell and serve dog meat in Canada!! Quote - "Under Canada's Wildlife Act, it is illegal to sell meat from any wild species. But there is no law against selling and serving canine meat, including dogs, if it is killed and gutted in front of federal inspectors.[12] In 2003, health inspectors discovered four frozen canine carcasses in the freezer of a Chinese restaurant in Edmonton[13] which, in the end, were found to be coyotes. The Edmonton health inspector said that it is not illegal to sell and eat the meat of dogs and other canines, as long as the meat has been inspected.
