rabbithounds,
what about the big Gatorade type coolers? Laurie said she has one. Will the health department throw a fit about that? Does everything need to be pre-packaged?
As far as hot dogs, I think it's a great idea to have some kind of lunch available. Last year, the grounds had hot food available on site, and I have to tell you, they probably saved me. As the trails judge, I can't leave my "post" because the trails course goes on all day long. I don't take a lunch break. Neither did the office (last year that was Bonnie and Jenny aka cardicorgi). 90% of the volunteers didn't have much time on their hands last year. And the riders who rode in a ton of classes had the same problem. They couldn't leave the grounds to go get a bite to eat. I think the $25 fee is totally worth it. Just my two cents after seeing what happened last year.

I concur with Whitewolf. Having lunch served at the venue would be a lifesaver for many of us.

I concur with Whitewolf. Having lunch served at the venue would be a lifesaver for many of us. Plus help with revenue, I think. At Celebrate the Horse, I bought an ear of corn ($4) at a stand. The ladies told me they sold 1200 ears of corn the day before (quick math calculation and I was impressed!). There has to be a pretty good profit on that - ear of corn, butter, napkin.... ;D I don't know what the hot dogs would sell for, but it seems to me the profit would eclipse the $25 fee by several miles! (It would be nice to have food for vegetarians too...)

The less "exposed" the food is (out of a container) the simplier the permit is for us. Though we probably make more profit on a poured drink there is a greater threat from cooties as far as the health department is concerned. So I prefer going the canned route as it's simplier and we don't have to worry about getting cups and ice to go in the cups. We will be serving the public so it is them we must protect. As far as pricing goes, I was going to keep it simple too. Hot Dogs for $2.00, all the snacks at $1.00 and the drinks as well, maybe more depending on the size. Have the Lunch Special of a Hot Dog, Drink and snack (chips or fruit) for $5.00. Hmmm, not much of a "special" with that pricing. Will work on that. As far as a Vegitarian menu goes, most of it is non-meat, but if you have suggestions for the hot dog alternative, let me know. Are there Vegan hot dogs? Jet suggested Cheese Dogs. A container of Wheat Grass? ;D Sorry, couldn't resist. ;D How about numbers ? Any one want to guess the number of people we will have? This will be VERY helpful when approaching sponsors such as Tims Cascade and Jones Soda. ;D

Yves makes some awesome not-dogs (fake meat - soy mostly) - Fred Meyers sells them. They are really fast to prepare and pretty tasty! Morningstar also makes them, but those are a bit more complicated to prepare.
Last year the cafe at the show was really busy at lunch. I'd guess 50-100 people. That might be a decent guesstimate.
Can we use coolers for icing sodas and waters? Also - about the hot dogs - what kind of set up is needed per health dept. regs? A propane stove? Grill? Gloves for food handlers, paper plates, packets of ketchup/mustard(?).

As far as cooking HDs, I had a couple of ideas. One is usig those small hot plate electric grill things, that way we can grill the onions at the same time. The other idea was to use crock pots and cook the HDs that way, but no way to grill onions Does anyone have one of those electric grills? Yes, we will have to have the plastic glove but I doubt we will have to wear hair nets ;D Yes, we will need coolers for the drinks, so if you have one , please bring it.

I'd say closer to the 100 level on cardi's guess. We end up with somewhere in the area of 20 volunteers or so, and then on top of that, you have the participants. I don't know how close Bridle Trails is to any kind of restaurant. If it's really far out, we'll probably have most of the show grounds hitting up the concessions stand.

Vegan wraps or premade green, fruit or pasta salads are easy to make 24 hrs ahead of time. Wraps are especially easy for participants to eat "on the go". Salads can be packed in 24 - 32 oz cups for easy tossing and eating.

PCC or Whole Foods may be willing to donate some prepackaged veg wraps or other items too... has anyone approached them?
If you want to 'pre-assemble' foods, you can use a health dept. approved kitchen. Many churches, community centers, even someplace like Dinner's Ready, may donate their space or rent at a reduced fee for a late-night prep party. Not sure of what might be close to BT area...

We missed the PCC deadline but I have submitted a request to Whole Foods today and Top Food, so hopefully one of those will come through. Good lead though, I can contact the people who make those wraps! Yeah baby! ;D

Awesome!! It would be great (and healthier!) to have an alternative to meat/meat substitutes.
The pre-made veg wraps at QFC, Top Foods, etc. are great and I believe are made locally.
There was a really good article a few months back in Stable Management magazine on what makes for a "winning" concession stand at a horse show. (I will look for it... but I usually toss magazines after a few months. I know they will fax a copy of an article for a small (few dollar) fee if anyone is interested.)
